French Mirepoix

The French Mirepoix, and other "lentiful" products have been savory and hearty meal and protein basics in regard to my vegan diet. With French Mirepoix, for me the onion base immediately emerges as a slightly sharp/tangy taste presence, from the hearty background of the lentil base. I would add, the lentil products are large part of my routine diet which has led to improved laboratory studies after my 3-vessel coronary artery bi-pass graft, which includes a cholesterol level of 70, an LDL of 28, and a lipoprotein (a) of 9 (allowing me to reduce my Rosuvastatin from 20 mg to 10 mg/day).

Excellent for a quick snack or a source of protein. Easy to fix. I just wish it had just a bit more lentils in the cup.

THIS was so delicious! It will be my go to flavor! I am loving the lentils and the ability to have a fast meal with easy preparation! Not only is boiling the water so simple in my kettle here while working at home, but I love the seasonings, the mixture, and the satisfying way of feeling full without being too full. I decided this time to add 1 tablespoon of Pastina for just a little tiny extra 'something' and it was so good. Cannot wait to get more!

I bought a mix-pack awhile back and was admittedly not excited about mirepoix since it sounded kind of… boring. Boy was I wrong. I have not yet tried all of the flavors Lentiful offers but this is my favorite flavor so far. More generally, I appreciate the convenience and nutrition of these little cups— I’ve been eating them almost daily at work (just needed an electric tea kettle) for MONTHS and I don’t seem to be in any danger of tiring of them. I actually look forward to lunch!
